Healthy breakfast ideas

Everyone hears how breakfast is the most important meal of the day but still we rush out of the houses in the mornings without proper nourishment. Here are a 3 easy and quick breakfast ideas for exactly those mornings:

  1. scrambled eggs and toast – Crack the eggs into a measuring jug.
    Add a tiny pinch of salt and pepper, then use a fork to beat them together well.
    Put a medium saucepan over a low heat and add the butter.
    Leave it to melt slowly, then when it starts to bubble carefully pour in the eggs.
    Stir slowly with a wooden spoon, or a spatula if you’ve got one, so you can get right to the edges of the pan. Keep gently stirring until the eggs still look silky, slightly runny and slightly underdone, and then remove from the heat – the heat of the pan will continue to cook the eggs to perfection. Try adding some vegetables or cheese to make it more exciting
  2. Frozen nutty banana –  Cut 1 firm (but ripe) banana in half and unpeel, arrange on a small baking sheet or freezer-safe plate, and spread each half with 1 tablespoon almond butter (on the sides not touching the plate). Stick whatever toppings you like on the almond butter—granola, chia or flaxseeds, and cinnamon. Insert a popsicle stick or skewer into the cut end of each half and freeze until solid (at least 2-3 hours).
  3. Berry and yoghurt smoothie – Blend frozen fruit (banana and berries work well) with Greek yogurt and a liquid of your choice (milk, juice, coconut water—whatever you like). Freeze overnight and thaw throughout the day to enjoy in the afternoon or blend up in the morning.
